Very basic flower knit on regular straight knitting needles
Vary size by using different strands/weights of yarn and change needle size to fit your yarn thickness
Layer the different sizes to make multi-layer flower
Pattern as written below makes simple 6 petal flower - but explains how you can make adjustments.
In photo above: Center flower made with single strand; Middle flower made with 2-strands; Outer flower made with 3 strands and slightly enlarged pattern.
START
Cast on 6 stitches.
ROW 1-3
Knit across all stitches.
ROW 4
Slip 1, knit 3. Then with left-hand needle, on right needle lift 2nd to last stitch over last stitch, and continue lifting stitches to end of needle. This will leave one stitch on right needle. Then knit the last 2 stitches.
ROW 5
Knit across the 3 stitches, then cast on 3 stitches (to make 6 total).
ROW 6
Knit across the 6 stitches.
FOR EACH REMAINING PETAL
Work rows 1-6 again to make 5 more petals for 6 total. End the last petal with row 4, then cast off the 3 stitches. Fasten off, leaving a tail of about 10" for sewing.
NOTE: Make sure to knit all 6 rows - it's easy to forget one of the rows.
This will make a string of petals that are connected.
FINISHING
With long tail, thread onto needle and run through the bottom of the petals to make a gathering stitch. Tighten but leave a small circle open, and secure. With the yarn still on the needle, make a few stitches to connect your first and last petal about half-way up (to match the other petals).
Weave in all other threads.
MAKE MORE LAYERS
If you want multiple layers (like shown in photo), make additional flowers larger (see below).
Sew multiple layers together with yarn, and you could make decorative center to cover hole in the middle.
TO MAKE LARGER
YARN THICKNESS: You can vary the yarn thickness to make the flower larger (and adjust your needle size accordingly.
In the photo, a single strand was used for the center, 2 strands for the middle, and 3 strands for the outer petals.
NUMBER OF STITCHES: You can also increase the stitches in your pattern to make larger. Just increase the pattern by 2 stitch increments to make even larger. For example, instead of casting on 6 stitches, cast on 8 stitches. Row 4 of the pattern has you decreasing the number of stitches by half - so if you have 8 stitches you'll reduce to 4. Then cast 4 back on.
NUMBER OF PETALS: If you want to make fuller flower, continue with pattern making more than 6 petals.
